Keto Pancakes

 

4 Egg Whites in two bowls- two egg whites in one and two egg whites in another. 

1/2 cup heavy whipping cream

1 tsp of vanilla extract

1 Tbsp of unflavored or vanilla protein powder

1/4 cup coconut flour 

1 tsp baking powder

1 dash of cinnamon (optional)

1 packet of Splenda or Stevia

 

Beat two egg whites with a pinch of salt until they have soft peaks. Set aside.

 

Mix the heavy whipping cream, two whole eggs and remaining two egg whites and vanilla in a bowl. Make sure it is mixed well. 

 

In a separate bowl whisk coconut flour, protein powder, baking powder and cinnamon. Add dry ingredients to the wet and mix well.

 

Fold the whipped egg whites int the the batter. 

 

Preheat a non-stick skillet over medium heat.
