Keto Chocolate Chippers
2 1/2 Cup Blanched Almond Flour
1/4 cup protein powder
2 T Psyllium husk
1/2 Cup Butter
3 Large Eggs
1/2 Cup Xylitol or Swerve
1 stream of liquid Stevia
1Cup sugar free chocolate chips
1/2 tsp Xanthan gum
1/2 tsp. Salt
1 tsp. Baking Soda
1 tsp. Vanilla Extract
1. Preheat oven to 350 F
2. In a large bowl combine the almond flour, salt, baking soda, and erythritol together.
3. In a separate bowl, melt your butter and mix in the vanilla, dark chocolate chips and eggs.
4. Mix the wet ingredients into the dry ingredients until a cohesive dough has formed.
Scoop out 1 tsp of dough per cookie and place onto a cookie sheet. Press flat and bake for 8-10 minutes, or until the edges have turned golden brown.
Remove from oven and transfer to a stable cooling rack. They firm as they cool.
Let cool for 10-15 minutes, then enjoy!
