2 1/2 Cup Almond Flour

1/2 cup protein powder

2 T Psyllium husk 

1 tsp Xanthan gum

3/4 Cup Butter

3 Large Eggs

1/2 Cup Xylitol

1/4 Cup Dark Chocolate Chips chopped into smaller bits

1/2 tsp. Salt

1 tsp. Baking Soda

1 Tbsp. Vanilla Extract

1. Preheat oven to 350 F

2. In a large bowl combine the dry ingredients

3. In a separate bowl mix melted butter with the other wet ingredients and the chocolate chips

4. Stir together the wet and dry ingredients until mixed well and chocolate bits are evenly distributed


Scoop out 1 rounded tsp of dough per cookie and place onto a cookie sheet covered with parchment paper. Flatten slightly with a measuring cup covered in plastic wrap. ( I also like to use nonstick foil ) 

Bake for 7-10 minutes, or until the edges have turned lightly golden brown.

Remove from oven and let cool for five minutes on the baking sheet

Transfer to a cooling rack. 

Let cool for a few minutes so that they firm up and enjoy!
