Creamy Cheesy Mashed Cauliflower 

4 servings =

1 head of cauliflower fresh or frozen

4oz cream cheese

2 to 4 oz cheddar cheese

4T Kerrygold butter

Add garlic salt, pepper and salt to taste. Approximately ½ tsp of each to start.

Heavy whipping cream if needed

Cook raw or frozen Cauliflower in the microwave without extra water until soft and done. I usually do this in 5 minute increments so that I do not scorch the cauliflower.

Using a food processor, immersion blender or mixer beat all of the ingredients together until as smooth as you like.

Add cream if needed and enjoy.
