Cheesy Loaded Cauliflower
1 head of cauliflower cut into small pieces
1 8oz brick of cream cheese
4 oz velveeta cheese
8 oz shredded cheddar
1/2 cup sour cream
1/2 to 1 cup Heavy whipping cream
12 slices of bacon fried and diced or crumbled
1 medium onion diced
6 green onions sliced or 2T dried chives
I tsp onion powder
1 tsp garlic salt
1. Steam or boil the cauliflower untill tender but not soft. Drain all water and let sit in a colander for a few minutes to dry out so that your cauliflower will not be watery. Put the drained cauliflower into a large casserole dish.
2. Put all cheeses and spices into a microwave bowl or a good nonstick saucepan with the diced onion. Heat on low until all cheeses are melted and can be stirred together into a smooth sauce.
3. Add 1/2 of the bacon to the sauce and pour over the cauliflower. Depending on the size of your head of cauliflower you may be able to save some of the sauce for another dish.
4. Bake at 350 degrees for 20 to 30 minutes or until bubbly in the center.
