First I would like to say that when I discovered these recipes I immediately fell in love with the ease of the recipe and how delicious they are. I love cinnamon and therefore I love the recipe that Libby at Ditch the Carbs has created. It's amazing and you can doctor it up any way you like. Here is the link to the original recipe:

I love that either of these recipes can be altered to make it to your taste.
Below is another great recipe for a fat and fiber cereal from Dr. Sarah's facebook page. It's delicious and just a variation on the one posted above.
Fat and Fiber Cereal
1 ½ cups Hemp seed (I like to combine toasted and shelled but whatever you have works!)
1 cup almond flour
1 cup chopped walnuts (insert other cereal here if you would like)
1 ½ cup flaked coconut (flaked is better for this than shredded)
¾ cup Cacao Nibs
1/3 cup xylitol
3Tbs melted butter
1 tsp maple and 1 tsp almond extract – you could try many different flavors here
1 large egg whisked
Preheat oven to 325 degrees
Mix all dry ingredients into a bowl. Stir in wet ingredients until fully mixed. Spread out on cookie sheet covered with parchment paper. Bake for 25 min approx. but keep checking and turning on cookie sheet to ensure even cooking. Done when starts to turn golden.
12 servings (I count ½ the carbs of xylitol)
